If you want to buy the best fruit and veg in terms of value and quality just now, you will need to know what is seasonal in April.
Rhubarb, beetroot, carrots, new potatoes, parsnips, kale, spring greens, spinach, rocket, sorrel, watercress, chicory, radish, spring onions, artichoke and morel mushrooms are all seasonal in April.
Check out our previous blog post recipes for Beetroot Salad and Spring Greens but meantime we are going to focus on that underused, crunchy vegetable, the Radish! It can be found either as British pink, white Asian and Spanish black.
Radish’s pungent property brightens skin through detoxification, decongests the respiratory tract from mucus and keeps you cool. Even better is that it boosts immunity for those vile viruses that come with this fluctuating weather.
It is easily incorporated into salads, but experiment by using it in stir-fries, roasts, stews and juices.
Try this quick and easy Radish and Rocket Salad:
200g quinoa (optional) 50g sunflower seeds
Feta (optional)
A handful of rocket
4 radish
2-3 spring onions
Lemon juice
Dill
Honey
Cook 200g of quinoa (as per packet instructions) and once cooled add 50g of toasted sunflower seeds, and an optional scatter of feta.
In a bowl, mix 4 handfuls of washed rocket, 4 sliced watermelon radishes and ½ a bunch of diced spring onions.
Make a dressing with 3 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp minced dill, 2 tsp honey and season with salt and pepper. We like to use a small jar to easily combine.
Stir the salad into the quinoa and drizzle with your dressing. This would make a great lunch or try the salad (without the quinoa) in the evening with some fish instead.
