Healthy Pancakes - and Vegan too!

Is there a better way to start out your Sunday than with a pile of freshly made healthy pancakes? We’ve brought you this wonderfully healthy, mouth-watering recipe that happens to be vegan and – guess what? Sugar-free!

The buckwheat flour provides a higher amount of protein, fibre and micronutrients than normal flour, making the recipe even more nutritious.


However, we should warn you: these healthy pancakes are extremely addictive, so please don’t expect to eat only a couple of them. It’s not even worth trying.


Ingredients:

2 ripe bananas

1 tbsp. of ground flaxseed

¾ cup of plant milk

1 cup of buckwheat flour

1 tsp of cinnamon

1 tsp of baking powder

1 tsp of vanilla extract (or content of ½ vanilla bean)

¼ tsp of pumpkin spice

Coconut oil


Mash the bananas until creamy and mix them with ground flaxseeds and a plant-based milk of your choice. Add the rest of the ingredients and combine into a smooth pancake batter, adding more milk to reach the right consistency. Pan fry the pancakes on a non-stick pan in a film of coconut oil.


While of course there is no right or wrong when it comes to pancake toppings, we suggest a delicious combination of coconut yoghurt, mixed berries and fresh mint leaves.
