Your Nutritional Science Program        

What am I going to learn?

On your Nutritional Science Programme you will learn everything you need to know about nutrition, foods, diets, nutrients and how these interact with the human body. You will gain a deep evidence-based understanding of the complex relationships between nutrition and diseases. This is a multidisciplinary programme which includes knowledge of Human Physiology, Anatomy, Chemistry, Nutritional Biochemistry, Food Bio-technology, Biology, Pharmacology and Physiopathology.       

Programme overview

This Nutritional Science Programme is suitable for doctors, dietitians, pharmacists, nurses, students, scientists, healthcare workers and those interested in improving their knowledge of nutrition. To optimise the quality of the programme, each intake will be limited to 10 participants.

This is a part-time programme which consists of one module per year for two years. Each module is made up of 10 sessions. Each session is a full day, including nutritious lunch and healthy breaks, with two sessions featuring a special dinner on the theme being studied.  Sessions will run from 9.30am to 5.30pm one Sunday per month from September to June, making the programme accessible to those in full-time employment.

Upon registration, you will receive a welcome pack including the programme schedule. Following each session, you will receive electronic and hard copies of the material covered, and will be given the opportunity to extend your learning through access to reviews, additional papers, notes and reading lists relating to the sessions.  

What happens during a session?

Sessions are tailored to best fit the theme being studied and comprise of formal lectures, case studies, discussions, interactive workshops, demonstrations and healthy cooking classes.

Module overview    


Module One (Sept 2015 - June 2016)


Fundamentals of Human Nutrition: Metabolism and Homeostasis; introduction to Cell Physiology; Food Composition; Chemical introduction to Nutrients.


Digestion and Absorption: Overview of Digestive Tract; secretion of Digestive Materials; stimulation of Digestive System;  molecules for Digestion and Absorption; Absorption Physiology; Digestion and Absorption of proteins, lipids and carbohydrates; Malabsorption Syndromes and Resistance to Digestion.


Requirements for Energy: Carbohydrates, Fats and Proteins; Energy Expenditure and Requirements in Pregnancy, including Lactation and Human Development stages.

Vitamins - an Overview: Chemistry; Food Sources; Absorption; Biochemical role and functions; Deficiency; Assessment of Vitamins; Hyper-Hypovitaminosis; Toxicity.

Minerals - an Overview: Chemistry; Food Functions and Effects; Deficiency and Excess; Sources and Intakes.  


       Module Two (Sept 2016 – June 2017)  

Effects of Preparation and Processing: Cooking and Preservation; Home and Industrial Cooking, Freezing and Processing; Stability of individual Nutrients with different cooking methods.  

Nutritional aspects of Pregnancy and Lactation: Nutrition prior to and during Pregnancy; nutritional requirements and other Maternal factors; Nutrition and Effects of Lactation; overview of Weaning.

Nutrition and Ageing: Life Expectancy and Lifespan; effects of Nutrition, Supplements and Genes; role of Antioxidants; factors affecting Nutrition Status.


Vegetarian Nutrition: an overview of a Vegetarian Diet through life; trends and types; Health Implications in Vegetarian Diets.

Nutrition and Specific Disorders: Obesity and Eating Disorders; Cholesterol and Dyslipidemia; Osteoporosis; Diabetes; Allergies and Intolerance; Metabolic effects of Alcohol.


Registration and payment before 1st Sept 2015, £1250 per module; module one to be paid in full. Module two to be paid in full before 1st Sept 2016.

Early registration and payment before 1st July 2015, special discounted rate of £1150 per module; module one to be paid in full. Module two to be paid in full before 1st June 2016.

Student discount of 10%.
